Taboola salad

This is one of the famous Mediterranean salad that been loved by everybody. In this recipe, I am trying to change burghul by quinoa (Gluten free), however, you can use burghul if you are not restricted to gluten-free diet.

Freshly prepared Taboola

Preparation time: 15 minutes

Servings: Three persons


  1. Three cups of fresh Italian parsley (cut into small pieces)
  2. Three mid-sized tomatoes (cut into small pieces)
  3. Three small white onions (chopped into small pieces)
  4. 1/2 cup (87 g) of rinsed and drained quinoa ( you can still use burghul here !)
  5. 1/2 cup freshly chopped mint
  6. Two freshly juiced lemons (mid-size, if large use only one)
  7. Around 1/4 cup  (60 ml ) extra virgin olive oil
  8. 1/4 teaspoon of ground black pepper
  9. 1/4 teaspoon salt (I prefer Himalaya pink salt)


  • In a med size bowl, mix the chopped tomato with the quinoa and set them aside
  • In another bowl, add the chopped onions to the chopped parsley and mix very well
  • Add the tomato and quinoa to the onions and parsley, then add all other ingredients
  • Mix the ingredients slowly (I prefer to use my hands)
  • Optional: you can decorate with olives


Fresh Ingredients are essential when making Taboola (Tabouli) the intense flavor of these herbs just do not come with the dried herbs
