Refreshing, savory all at the same time, I love it and I know for a fact that you would too! Mustard Chicken Salad, such amazing combinations in a bowl! you can have them for light lunch or dinner.
Preparation time: 25 minutes + Cooking time 35 minutes
Four servings
Ingredients:
- Three chicken breasts, cut into pieces or slices
- 600 g (1.3 Ib) lettuce (chopped)
- 70 g (2.5 Oz) Italian parsley (chopped)
- 30 g (1 Oz) onion (chopped)
- 100 g (3.5 Oz) pitted olives (sliced)
- 200 g ( 7 Oz) red pepper cut into small cubes
- Optional: cut two bread slices into cubes and toast them
Chicken breasts dressing:
- 1/2 tablespoon paprika
- 1/2 tablespoon garlic powder
- 1/4 tablespoon salt
- 1/4 tablespoon cumin
- 2 tablespoons extra virgin olive oil
Salad dressing:
- 50 g (1.8 Oz) mustard ( I prefer organic Dijon mustard)
- 3 tablespoons extra virgin olive oil
- 4 tablespoons lemon juice (squeeze freshly)
- pinch of thyme or oregano
Preparation:
- Mix the chicken slices with the chicken dressing very well
- Bake at 175 C (350 F) for 25 minutes
- Mix half of the amount of the salad dressing with lettuces, Italian parsley, onion, olives slices, bread cubes, and pepper.
- Put the mixture in a semi-flat dish
- Add the baked chicken breasts
- Then sprinkle with the rest of the salad dressing
