Mustard Chicken Salad

Refreshing, savory all at the same time,  I love it and I know for a fact that you would too! Mustard Chicken Salad, such amazing combinations in a bowl! you can have them for light lunch or dinner.

Preparation time: 25 minutes + Cooking time 35 minutes

Four servings

Ingredients:

  1. Three chicken breasts, cut into pieces or slices
  2. 600 g (1.3 Ib) lettuce (chopped)
  3. 70 g (2.5 Oz) Italian parsley (chopped)
  4. 30 g (1 Oz) onion (chopped)
  5. 100 g (3.5 Oz) pitted olives (sliced)
  6. 200 g ( 7 Oz) red pepper cut into small cubes
  7. Optional: cut two bread slices into cubes and toast them

Chicken breasts dressing:

  1. 1/2 tablespoon paprika
  2. 1/2 tablespoon garlic powder
  3. 1/4 tablespoon salt
  4. 1/4 tablespoon cumin
  5. 2 tablespoons extra virgin olive oil

Salad dressing:

  1. 50 g (1.8 Oz) mustard ( I prefer organic Dijon mustard)
  2. 3 tablespoons extra virgin olive oil
  3. 4 tablespoons lemon juice (squeeze freshly)
  4. pinch of thyme or oregano

Preparation:

  • Mix the chicken slices with the chicken dressing very well
  • Bake at 175 C (350 F) for 25 minutes
  • Mix half of the amount of the salad dressing with lettuces, Italian parsley, onion,  olives slices, bread cubes, and pepper.
  • Put the mixture in a semi-flat dish
  • Add the baked chicken breasts
  • Then sprinkle with the rest of the salad dressing
